[ Eating without artificial flavouring ]

In our daily life we try to eat as less e-numbers and chemicals in our food as possible. With this I mean food additives, for example flavour enhancers like MSG or yeast extract.

So when we’re cooking Thai food or making a nice curry, it can be very tricky to use ready made curry paste from the supermarket. That is why we love making our own curry paste, with fresh ingredients.

When you use the quantities in the recipe, you will have a jar filled with green curry paste. It will last at least for a few weeks when stored in the fridge.

Green curry paste

INGREDIENTS

  •  6 green chili peppers
  • ¼ cup of ginger
  • ¼ cup of lemongrass
  • ½ cup of onion or shallots
  • 1 cup of coriander
  • 2 tbsp of garlic
  • 2 tbsp of fresh turmeric root (otherwise replace with 2 tsp of ground turmeric)
  • 1 tbsp of lime zest
  • 2 tbsp of ground cumin
  • 2 tbsp of ground coriander
  • 1 tbsp of black pepper
  • 2 tsp of shrimp paste
  • 4 tbsp of peanut oil

Blend all the ingredients together; if it’s to dry add some extra oil. Do mix in the stem of the coriander, since they do have a lot of flavour.

Enjoy and do make some nice Thai green curry!
