[ I love Macarons I ]
Well as you can see I love baking macarons, as much as eating them. But to be honest I have a bit of a love hate relationship with baking these amazing treats. The thing is it takes forever baking them & in every step you can make small mistakes that can ruin the finish product. This has to do with the temperature off the sugar water that you add to the egg whites, but also to do with how long you leave the egg whites in the fridge before using them.
Well if I have to quote Pierre Hermes, he says it best to leave the egg whites for over a week in the fridge before using them, since they loose their elastic over time. So every time you want to bake macarons, think off this step a week ahead, otherwise you will see the difference in the macarons.
But of course they taste just divine, even if they are broken! So start the challenge & experiment with flavours.
